Description
The founder, Liu Yicai, is a pastry and cake chef who had a long-held dream of opening a cake shop. However, just one year before opening the shop, several of his family’s elders fell seriously ill. This prompted him to think about what kind of cakes and desserts would be gentle on the body – products with less oil, less sugar, and no additives. In an era where food safety issues are prevalent, he wanted to create delicious treats that his family could enjoy without worry. After experimenting with numerous recipes and products, he discovered that cakes still contain too much sugar and fat. For the sake of his family’s health, he decided to abandon the cake project and instead opted for the rich-textured and nutritious Macadamia Nut Tart.
The idea of creating healthy and delicious Macadamia Nut Tarts and the overall concept of the shop’s products sprouted from this decision. Unlike commercially available nut tarts that use pre-made tart shells, Liu Yicai insisted on overseeing every step of the process, from ingredients to the finished tart. He even developed his exclusive “crispy” homemade tart crust, which involves 14 distinct steps, every morning when going to work he weighs the ingredients, mixes, lets it rest, kneads, separates, shapes, bakes, demolds, roasts nuts, cooks sugar, fills, bakes again, lets them cool, and finally packages them.
He rigorously controls the ingredients, selecting them carefully:
Natural cream imported from New Zealand, with its natural and rich milk aroma that is irreplaceable.
Japanese seaweed sugar, which is 45% less sweet than regular sugar, providing a non-cloying, great taste.
Grade 4L Macadamia nuts, ensuring each tart is packed with the largest nuts possible.
Taiwanese pure honey with its irresistible aroma.
Japanese seaweed powder, and more.
This level of commitment in terms of cost and time is double that of others, but Liu Yicai insists on it. He does it happily because these are treats that his own family will eat. He says that as long as he doesn’t lose money and makes a little profit, his sincerest wish is to allow everyone to enjoy each tart with peace of mind and happiness!
