In a flood that happened a century ago, the Kao family took their only Guanyin statue and came back to Jingmei. Over four generations, the family went from their great grand parents' noodle stall to the catering business.
Pork back fat is cut into pockets and stuffed with filling, then battered and fried until it is golden. The golden shrimp pancake is a Kang San Lau dish from the previous century.
Fried eggs with pork brain, five-spice chicken rolls, egg yolk and glass noodle soup.... These delightful and difficult-to-make restaurant dishes that have been lost have been brought back and are once again on the international Michelin stage.
